Yield: 48 cookies
Ingredients
1 cup softened unsalted butter
1 cup sugar
¼ TSP salt
2 eggs
TSP vanilla extract
¼ TSP almond extract (optional)
3 cups of flour
Instructions
Preheat oven to 350 degrees
In a bowl, cream the butter and sugar together
Add eggs and extracts to bowl (room temperature eggs work best)
Add flour and salt into bowl, and mix until combined
Refrigerate dough until firm (30 minutes)
Roll out until ¼ inch thick (using a little flour on your rolling pin helps)
Cut out shapes
Freeze cut-out cookie dough for 5 minutes
Bake for 8-10 minutes
Cool and decorate as desired
